The natural properties of the wheat they mill this flour from are ideal for baking cakes, sponges and batters. This is one of the favourite flours for an easy to handle shortcrust pastry, and is especially good in tarts and pies. (Not suitable for puff pastry.)
 
The soft cake and pastry flour is milled from English organic wheat. The climate here provides excellent growing conditions for soft wheats, which are perfectly suited to creating beautifully light sponges, cakes and batters.
